Our answer led us to Kannauj, a city in northern India where the art of distillation has been practiced for centuries, long before "perfumery" became an industry. Inside its traditional copper stills, heated over open wood fires, craftsmen work at a pace dictated not by production quotas but by the materials themselves. The flowers, the oils, the heat, the patience.
